Devine Brine

This is to make 1 gallon of brine.

1 Gallon (total) Water
1 Cup Finishing Spice
1/4 Cup Salt
2 Tablespoons Sugar
1 Citrus (Orange, Lemon, Lime) Zest and Juice
Combine 1/2 Gallon Water, Finishing Spice, Salt and Sugar into a large pot
and bring to a rolling boil. Once boiling, turn the heat off and add citrus zest.
Let stand 15 minutes.
Cool  brine:
  • To cool quickly, add ice cubes and let melt to equal 1 gallon.
  • Place in refrigerator to keep. 
  • Brine can be made up to 24 hours before.
Add juice once brine has cooled.
